Ingredientes

  • 3/4 c. Water
  • 1/4 c. Sugar
  • 1 lrg Mango, peeled, pitted, and minced
  • 3/4 c. Unsweetened pineapple juice
  • 1/4 c. Well-stirred canned cream of coconut
  • 2 Tbsp. Fresh lime juice, or possibly to taste A healthy pinch of freshly grated lime zest

Direcciones

  1. In a small saucepan boil the water with the sugar, stirring, till the sugar is dissolved, simmer the mix for 5 min, and remove the pan from the heat. Let the syrup cold to room temperature and refrigerateit, covered, till it is cool. In a blender puree the mango with the pineapple juice, the cream of coconut, the lime juice, the zest, and the syrup till the mix is smooth. Freeze the mix in an ice-cream freezer according to the manufacturer's instructions.
  2. Makes about 1 pint.
