Ingredientes

  • 1/2 c. Butter, melted
  • 3/4 c. Honey
  • 1 c. Buttermilk
  • 3 x Large eggs
  • 3 c. Whole wheat pastry flour, "soft" whole wheat
  • 1 1/2 tsp Baking pwdr
  • 3/4 tsp Baking soda
  • 1 1/2 c. Shredded coconut

Direcciones

  1. Whisk together the butter, honey, buttermilk and Large eggs. Sift together the flour, baking pwdr and soda. Toss coconut into dry ingredients. Add in wet ingredients to dry ingredients and mix together just sufficient to thoroughly combine. Spoon batter out into greased or possibly paper-lined muffin c. and bake for 25-30 min in a 375 F. oven.
  2. Yield: one dozen muffins from The SevaRestaurant in Ann Arbor, Mi. Head Chef Maren Peterson
