Ingredientes

  • 1/4 c. butter or possibly margarine
  • 1/2 c. sugar
  • 2 x Large eggs
  • 11/20 c. lowfat milk or possibly plain lowfat yoghurt
  • 1 1/20 c. self-raising flour
  • 1 c. macaroon dessicated coconut Combine
  • 1/4 c. sugar with
  • 1/4 c. dessicated coconut

Direcciones

  1. Preheat over to 350F, prepare pans. Blend the butter & sugar thoroughly, beat in Large eggs & lowfat milk/lowfat yoghurt. Gently fold the combined dry mix into the wet mix. Spoon into pans & sprinkle with topping. Bake for 25 mins.
  2. Makes 12medium muffins.
  3. Variations: Coconut & Orange: Reduce the lowfat milk/lowfat yoghurt to 1/2 c.. Add in 1/2 c. of blended or possibly pureed whole orange to the wet mix, or possibly 1/2 c. orange juice & 2 Tbsp of grated orange rind to the wet mix.
  4. Coconut & Cherry: Add in 1 c. of minced glace cherries to the combined wet mix.
  5. Coconut & Ginger: Add in 1/2 c. of minced glace ginger & 1/2 c. minced walnuts/pecans to the wet mix. 1/2 c. of minced glace cherries may also be added if you like.
  6. Coconut & Pineapple: Add in 1 c. of crushed tinned pineapple to the wet mix & reduce the lowfat milk or possibly lowfat yoghurt to 1 c.. Don't use fresh pineapple.
