Coconut Pudding

Ingredientes

  • 4 x Egg yolks
  • 1/2 c. Brown sugar
  • 1 pch Fresh grated nutmeg
  • 1 Tbsp. Pure vanilla extra
  • 2 Tbsp. Mount Gay Rum
  • 1 c. Lowfat milk
  • 1 c. Coconut lowfat milk
  • 5 Tbsp. Butter melted
  • 2 c. Grated fresh coconut
  • 2 c. Fresh bread crumbs
  • 4 x Egg whites sweetened, and whipped to stiff peaks

Direcciones

  1. Preheat the oven to 350 degrees. Grease a large oven-proof baking dish.
  2. In a mixing bowl, whisk the Large eggs, sugar, nutmeg, vanilla, and rum together. Whisk in the lowfat milk and coconut lowfat milk. Add in the butter, fresh coconut and bread crumbs. Whisk well. Pour the mix into the prepared pan. Bake for 1 hour. Remove from the oven and cold for 10 min.
  3. Increase the temperature to 450 degrees. Spread the meringue over the top of the pudding proportionately. Place back in the oven for a couple of min or possibly till golden.
  4. This recipe yields 10 to 12 servings.
