Receta Coconut Rice Desert (Mochi) (Bibinka)

- Rinse rice and cook in rice cooker. In saucepan combine coconut lowfat milk and 1 1/4 c. of the brown sugar. Cook over medium heat stirring constantly till thickened. (Approx. 20 minutes.)
- Preheat oven to 350 degrees F.
- Put cooked rice into a large bowl. Reserving 1/2 c. of coconut mix, stir remainder and remaining brown sugar proportionately into warm rice. Put into prepared pan. Top with reserved 1/2 c. of coconut lowfat milk mix. Bake for 20 min then broil for 5 min to set topping. Cut into small pcs.
