Ingredientes

  • 8 ounce Shortcrust Pastry
  • 4 Tbsp. Jam (any flavour)
  • 4 ounce Soft Margarine
  • 4 ounce Caster Sugar
  • 2 lrg Large eggs
  • 4 ounce Self-Raising Flour
  • 2 ounce Dessicated Coconut

Direcciones

  1. Preheat oven to 180C/350F/Gas Mark 4
  2. Roll out pastry and use to line a shallow, greased 12 by 7 inch cake tin.
  3. Trim edges. Spread with jam. In a bowl, beat margarine, sugar, Large eggs and flour till smooth. Spread over jam-covered pastry. Sprinkle with coconut and bake for 30 min till risen and golden brown.
  4. Allow to cold and cut into 12 slices
