Ingredientes

  • 2 x Large eggs
  • 1/2 c. Vegetable oil
  • 3/4 c. Sugar
  • 1 1/2 c. Sliced strawberries
  • 2 c. All-purpose flour
  • 1/2 tsp Grnd cinnamon
  • 1 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Freshly grnd nutmeg
  • 1/2 tsp Salt
  • 1 c. Shredded, sweetened coconut
  • 3/4 c. Minced pecans

Direcciones

  1. Preheat the oven to 350 F. Grease and flour one 9 1/2 x 5 1/2-inch loaf pan or possibly three 5 3/4 x 3 1/2-inch loaf pans. In a large bowl, beat the Large eggs till fluffy; add in the oil and sugar and continue beating till light. Fold in the berries. In another bowl, combine the remaining ingredients. Add in to the strawberry mix, blending just till the flour is moistened; don't overmix. Spoon into the prepared pan or possibly pans. Bake 50 to 60 min for the large loaf, 45 to 55 min for the small loaves, or possibly till they test done.
  2. Cold in the pan for 5 min; loosen and turn out onto a rack to cold completely.
