Ingredientes

  • 7 Tbsp. extra-virgin extra virgin olive oil divided
  • 1 x Spanish onion cut into 1/4" dice
  • 4 x garlic cloves thinly sliced
  • 1/2 lb small cherry tomatoes
  • 1 tsp warm chili flakes
  • 2 c. dry white wine
  • 2 lb cod fillet skin and bones removed
  • 1 lb mussels scrubbed, bearded, and rinsed
  • 1 lb cockles or possibly other small clams scrubbed
  • 1/4 c. minced Italian parsley Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a 14- to 16-inch saute/fry pan, heat 4 Tbsp. of the extra virgin olive oil till almost smoking. Add in the onions and garlic and saute/fry 3 to 5 min, till soft and light golden.
  2. Add in the tomatoes and the chili flakes and flatten tomatoes with a fork, allowing them to release their juices. Cook for 10 min, till tomatoes have completely fallen apart.
  3. Add in the wine and bring to a boil. Add in the cod, mussels, and cockles, reduce heat to a simmer and cover, allowing to cook for 10 min, till fish is cooked through.
  4. Remove from heat, sprinkle with parsley, drizzle with remaining extra virgin olive oil, season with salt and pepper and serve.
  5. This recipe yields 4 servings.
