- Preheat oven to 350 degrees F. and ensure oven rack is set in the middle.
- Prepare two 8-inch x 2-inch round cake pans.
- Sift into a measuring cup the require flour then pour into the mixing bowl.
- Sift into a measuring cup the require cocoa then pour into the mixing bowl.
- Add sugar, baking powder, and salt into the mixing bowl.
- Use an electric mixer fitted with a paddle attachment and mix at low speed until flour, cocoa, sugar, baking powder, and salt are combined.
- In another bowl, combine the buttermilk, oil, eggs, and vanilla.
- Turn mixer on low speed and slowly add the egg mixture to the dry ingredients.
- With mixer still on low, drizzle hot coffee and mix just to combine then stop.
- Scrap the bottom and sides of the bowl with a rubber spatula.
- Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean.
- Cool cake in the pans for 10 minutes, then remove from pan and place on cooling rack to cool completely.
