Ingredientes

  • 1 tsp Extra virgin olive oil
  • 1 c. Thinly sliced onion
  • 1/2 tsp Sugar
  • 1 x Garlic clove, sliced
  • 2 1/2 c. Halved cherry tomatoes
  • 2 Tbsp. Chopped fresh chives, divided
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 10 1/2 ounce Low-salt chicken broth, (1 can)
  • 1/4 c. Plain nonfat yogurt
  • 1 c. Evaporated skimmed lowfat milk

Direcciones

  1. Heat the oil in a saucepan over medium heat. Add in onion, sugar, and garlic; saute/fry 5 min. Add in tomatoes, 1 Tbsp. chives, salt, pepper, and broth; cover, reduce heat to low, and simmer 20 min.
  2. Place tomato mix and yogurt in a food processor, and process till smooth. Pour mix into a bowl; stir in lowfat milk. Cover and chill.
  3. Yield: 6servings (serving size: 3/4 c.).
  4. NOTES : Ladle into individual bowls, and top with remaining chives.
