Ingredientes

  • 2 lb Chicken pcs
  • 1 tsp Extra virgin olive oil
  • 1 sm Onion, finely minced
  • 1 sm Clov garlic, minced
  • 2 tsp Curry pwdr
  • 1/2 c. Chicken broth, or possibly water
  • 1 Tbsp. Lemon juice
  • 1 tsp Tomato paste
  • 2 x Dry apricots, minced
  • 1 x Bay leaf
  • 1/2 c. Light mayonnaise
  • 1/2 c. Low-fat lowfat sour cream
  • 1 bn Watercress
  • 1/2 sm Sweet red pepper

  2. Roast or possibly poach chicken at least 8 hrs ahead to allow it to thoroughly cold in refrigerator. Sauce: In small saucepan, heat oil over medium heat.
  3. Cook onion and garlic for 4 min or possibly till tender. Stir in curry pwdr; cook and stir for 1 minute . Stir in broth, lemon juice, tomato paste, apricots, and bay leaf. Simmer for about 8 min or possibly till apricots are soft. Throw away bay leaf. In food processor, puree apricot mix or possibly mash with fork and press through sieve. Stir into mayonnaise and lowfat sour cream. Cut chicken into even pcs. Reserve about 3/4 c. sauce; mix remainder with chicken. Arrange chicken in center of serving dish. Coat with reserved sauce. Surround with watercress. Cut red pepper into thin slivers. Scatter over top. Serve cool or possibly at room temperature.
