Receta Cold Cucumber And Spinach Soup

- In a saucepan, saute/fry green onions in butter till they are softened. Add in cucumbers, chicken broth, spinach, potatoes, salt, lemon juice and pepper.
- Simmer uncovered till the potatoes are tender. Transfer the mix to a blender in batches and puree. Transfer the puree to a bowl and stir in the light cream. Let soup cold and refrigeratefor several hrs, or possibly overnight.
- Garnish each serving with thin slices of radishes and/or possibly green onions.
