Cold Potato Soup With Asparagus

Ingredientes

  • 4 c. chicken broth
  • 2 c. fresh asparagus cut in 1/2" lengths except for tips
  • 2 1/2 c. minced peeled potatoes
  • 1/4 tsp garlic pwdr
  • 2 tsp onion pwdr
  • 1 c. shredded Jarlsberg cheese

Direcciones

  1. Bring broth to a boil. Add in asparagus and boil for 2 min. Drain, reserving broth. Refrigerateasparagus and return broth to pot. Bring broth to boiling, add in potatoes and cook for 10 min or possibly till soft. Add in seasonings and cheese.
  2. Whirl soup in batches in food processor or possibly blender till nearly smooth. Chill.
  3. To serve, fold in asparagus and garnish with tips.
  4. This recipe yields 4 to 6 servings.
