Ingredientes

  • 3 Tbsp. unsalted butter
  • 1 lb snow peas rinsed, stemmed, and roughly minced
  • 8 x green onions, including green cleaned, minced
  • 5 slc fresh ginger peeled/finely minced
  • 4 Tbsp. fresh mint leaves minced
  • 4 x garlic cloves minced
  • 1 can low-sodium chicken broth - (14 1/2 ounce) mixed with
  • 3 c. water Salt to taste Freshly-grnd black pepper to taste
  • 1 c. plain low-fat yogurt Snow peas for garnish Mint sprigs for garnish

Direcciones

  1. Heat butter in a medium saucepan. Add in snow peas, onions, ginger, mint leaves and garlic cloves. Stir and cover. Cook slowly over low heat till ingredients are wilted.
  2. Add in chicken broth mix, bring to a boil, cover and turn heat to simmer. Cook till ingredients are tender (about 20 min).
  3. Remove from heat and let cold for about 15 min. Season with salt and pepper to taste.
  4. Puree in a food processor till smooth. Put in a nonmetal container, cover and chill at least 3 hrs.
  5. When ready to serve, stir yogurt till smooth, then combine with soup. Garnish individual servings with snow peas and mint sprigs.
  6. This recipe yields 6 servings.
