Receta Cold Snow Pea Soup

- Heat butter in a medium saucepan. Add in snow peas, onions, ginger, mint leaves and garlic cloves. Stir and cover. Cook slowly over low heat till ingredients are wilted.
- Add in chicken broth mix, bring to a boil, cover and turn heat to simmer. Cook till ingredients are tender (about 20 min).
- Remove from heat and let cold for about 15 min. Season with salt and pepper to taste.
- Puree in a food processor till smooth. Put in a nonmetal container, cover and chill at least 3 hrs.
- When ready to serve, stir yogurt till smooth, then combine with soup. Garnish individual servings with snow peas and mint sprigs.
- This recipe yields 6 servings.
