Ingredientes

  • 2 lb Spinach, cooked briefly, thoroughly liquid removed and finely minced
  • 4 Tbsp. Extra virgin olive oil
  • 2 med Onions, finely minced
  • 1/2 c. Pine nuts
  • 2 x Garlic cloves, finely minced Salt and pepper, to taste
  • 6 med Tomatoes Sugar, just to taste Minced basil to taste

Direcciones

  1. Preheat the oven to 350.
  2. Drain the spinach thoroughly, then squeeze out the remaining moisture.
  3. In a skillet heat 2 Tbsp. of the oil and saute/fry the onions briefly till pale golden brown in color. Add in pine nuts and garlic and saute/fry 1 minute.
  4. Remove from the heat.
  5. Add in the spinach, the remaining oil, the salt, and the pepper.
  6. Cut the stem ends from the tomatoes, hollow them out and sprinkle the insides with salt, pepper, a little sugar and basil. Stuff the tomatoes with the spinach mix.
  7. Arrange the tomatoes in a baking dish and bake till they wrinkle, about 15 min. Chill. At serving time, bring to room temperature.
