Ingredientes

  • 1 tsp Vegetable oil
  • 1/4 lb Grnd pork
  • 1 sm Onion finely minced
  • 1 x Carrot peeled, minced fine
  • 1 x Potato peeled, minced fine
  • 1 x Tomato peeled, seeded, and minced
  • 4 Tbsp. Finely-minced cilantro
  • 2 x Hard-boiled Large eggs minced
  • 1 Tbsp. Capers rinsed, liquid removed, and minced Salt to taste Freshly-grnd black pepper to taste
  • 1 x recipe Cheese Pastry see * Note

Direcciones

  1. Heat the oil in a large skillet over moderate heat. Add in the meat, onions, carrot and potato and saute/fry till the meat is no longer pink and the vegetables are tender. Remove from the heat and stir in the tomato, cilantro, Large eggs, capers, salt and pepper.
  2. Preheat the oven to 450 degrees.
  3. Roll out the chilled Cheese Pastry to 1/4 inch thick and cut out 3-inch diameter rounds (you should get about 40). Place 2 Tbsp. of the filling on half of the rounds, and cover the filling with the remaining half of the rounds. Seal the edges with the tines of a fork. Place the filled empanadas on a baking sheet and bake for 8 to 10 min, or possibly till lightly browned.
  4. This recipe yields 4 to 6 servings.
