Here I come with my favourite again…..condensed milk! Those who follow my blog know that I LOVE condensed milk…..so much so to the point that I made my own. Chinese New Year is not over yet and my Chinese New Year will not be complete without something with condensed milk. It’s an auspicious occasion meant to be filled with lots of sweet goodies to bring sweetness to life.
Condensed Milk and Pine Nut Slice is probably another rare combination but a really delicious one. In fact this slice contains other favourite ingredients of mine which are coconut, peanut butter and Horlicks. They added extra flavour to this slice. This is a beautiful dessert to have with a cup of tea and great for any parties.
This recipe is again a simple and easy one. I made it for Chinese New Year Eve party.
Ingredients A (base)
- 4C biscuit crumbs
- 125g butter
- 3T peanut butter
- Slice base
- Melt the butter and peanut butter. Pour into the biscuit crumbs and mix well. Press into a paper lined tin and chill for a while.
- Ingredients B (topping)
- 1 & 1/2 C pine nuts
- 1C desiccated coconut
- 1/2C Horlicks
- 400g condensed milk
- Add the pine nuts topping
Mix the pine nuts, coconut and Horlicks well and then pour onto the base above.
Pour condensed milk over topping
Pour the condensed milk over it to cover. Then bake in a preheated oven at 180 degrees Celsius for about 20minutes or until the top turns caramel. Remove, let it cool down and chill in the fridge for a few hours until completely set before cutting.
For your information, I noticed that the base is a little too crumbly but the top portion was very delicious. If I make again, I will change the base. I will definitely be making this slice again. I really love the beautiful crunch from the pine nuts combined with all the beautiful flavour of the other ingredients and the sweetness from the caramelized condensed milk.
