- Place zucchini and couscous in heatproof bowl; pour in 1 c. boiling water. Cover and let stand for 5 min; fluff with fork.
- Whisk together extra virgin olive oil, wine vinegar, grnd cumin, grnd coriander, salt, paprika, pepper, grnd cloves and cinnamon; pour over couscous. Add in black beans and diced carrots; toss with fork to combine. Cover and chill for up to 4 hrs.
- Add in tomatoes; toss again.
- Makes 6 servings.
