Ingredientes

  • 1 sm zucchini shredded
  • 1 c. couscous
  • 1 c. boiling water
  • 1/3 c. extra virgin olive oil
  • 1/4 c. wine vinegar
  • 1 tsp grnd cumin
  • 1/2 tsp grnd coriander
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1 pch grnd cloves
  • 1 pch cinnamon
  • 2 c. black beans or possibly chick peas, drain
  • 2 med carrots diced
  • 1 c. cherry tomatoes quartered

Direcciones

  1. Place zucchini and couscous in heatproof bowl; pour in 1 c. boiling water. Cover and let stand for 5 min; fluff with fork.
  2. Whisk together extra virgin olive oil, wine vinegar, grnd cumin, grnd coriander, salt, paprika, pepper, grnd cloves and cinnamon; pour over couscous. Add in black beans and diced carrots; toss with fork to combine. Cover and chill for up to 4 hrs.
  3. Add in tomatoes; toss again.
  4. Makes 6 servings.
