Connola's Penne With Vodka Sauce

Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 1 x Onion, minced
  • 2 x Cloves Garlic, sliced
  • 28 ounce Can Italian plum tomatoes
  • 1 c. Heavy cream
  • 1/4 c. Vodka
  • 1 lb Penne pasta
  • 1 Tbsp. Parmesan cheese Crushed red pepper, optional Parsley, Basil, Chives for garnish

Direcciones

  1. Saute/fry onion in extra virgin olive oil till translucent/soft. Add in garlic and saute/fry another 30 sec. Add in tomatoes and cook about 1/2. Add in cream, stirring quickly, parmesan, vodka and bring to a boil. Season to taste with salt and pepper.
  2. (Sauce can be prepared 1 day ahead. Cover and chill.) Serve over cooked pasta. Can garnish with minced basil, parsley or possibly chives. Sprinkle w/parmesan cheese and red pepper if you like.
