Cooked Tomatillo Salsa With Arbol Chiles

Ingredientes

  • 1 Tbsp. Vegetable oil
  • 3 lrg Cloves garlic, chopped (3 to 4)
  • 1 med White onion, finely minced
  • 3 x Arbol, chiles finely minced (approximately 1 Tbsp.) (3 to 4)
  • 1 lb Liquid removed cooked or possibly canned tomatillos
  • 1 c. Chicken broth
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1/2 c. Fresh coriander leaves, minced

Direcciones

  1. You will need a large skillet or possibly heavy saucepan and either a blender or possibly food processor. Heat the oil in a large heavy skillet or possibly saucepan over medium high heat. Add in garlic and onion and cook, stirring occasionally, till onion is transparent. Add in chiles and cook for one minute more. Add in tomatillos, then pour in broth and add in sugar and salt. Bring to a boil, lower heat and gently simmer uncovered for thirty min. Remove from heat and let cold. Taste for salt and adjust if necessary. You can either mash the tomatillos with a fork to produce a coarse-textured salsa, or possibly transfer the sauce to a food processor or possibly blender to be briefly processed to a smooth texture. Transfer sauce to a serving dish and just before serving, stir in coriander leaf.
  2. Yield: approximately 2 c. medium-warm green salsa.
  3. NOTES : When tomatillos are in season they can be easily cooked by peeling off the paper-like
  4. covering, and then simply boiling the fruits in several inches of water
  5. till softened. We also
  6. freeze cooked tomatillos for use in the cool months. This salsa has great
  7. flavor and a little heat.
  8. It can be made with pre-cooked, frzn, and defrosted tomatillos, as well as
  9. canned or possibly fresh
  10. cooked tomatillos.
