Nothing says Christmas like the colors of red and green and every year when our produce department comes out with the masses of candied fruits I get nostalgic–for one of my aunts always made desserts with candied cherries when I was young. I picked up 2 packages of cherries and then wondered what to do with them. I did make Christmas Stollen, but I had a lot of cherries left, so I set about asking people what they did with them. The best (and easiest) tip I got was to make regular sugar cookies, making an indent and placing a cherry in the middle. Couldn’t be easier…
Cookies and Cherries
Ingredients:
- 2 stick butter-at room temperature
- 1/2 cup sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- juice of 1 lemon
- 2 cups flour
- 1 cup total of red and green candied cherries
Directions:
In a stand mixer, cream the butter and sugar. Add the egg yolks, extracts and lemon juice and mix until combined. Add the flour and mix until combined. COver the bowl with plastic wrap and refrigerated for 1 hour.
Preheat oven to 300 degrees. Cut the cherries in half. Using a small scooper, roll the dough into balls, place on a parchment lined cookie sheet and press an indent in the middle with your thumb. Place a cherry in the middle and bake for about 18-20 minutes. Cool on a wire rack.
