A few weeks back we celebrated 3 birthdays that happen when my parents are gone for the winter. Mine, The Oldest’s and my dad’s. Since the Oldest is away at school, when he’s home, I make his favorites. I showed him 5 cakes from the most recent Food Network Magazine and let him pick out which one I would make. So here it is, his choice of Birthday cakes for his 20th birthday (I won’t mention how old my dad and I are). It was so delicious that I had dreams of it well after it was gone. Maybe it will be a yearly tradition…
Cookies & Cream Cake
Ingredients:
For the Frosting:
- 6 ounces white chocolate, finely chopped
- 3 sticks butter-at room temperature
- 1 teaspoon vanilla extract
- Pinch of salt
- 3 cups powdered sugar
- For the Cake:
- 1- basic vanilla cake baked and cooled, made in 2 8 inch cake pans
1/2 package Oreo cookies-chopped
Directions:
Make the frosting:
Put the white chocolate in a microwave-safe bowl and heat in 30 second intervals, stirring between each, until smooth and melted; let cool slightly.
Beat the butter, vanilla and slat in a large bowl with a mixer on medium-high speed until smooth-about 1 minute. Add the melted white chocolate and beat until combined. Gradually beat in the powdered sugar until smooth.
Assemble the cake:
Place 1 layer on a cake plate; spread 1 cup of frosting on top and sprinkle with 1/2 cup chopped cookies. Top with the second layer. Cover the whole cake with the remaining frosting, then press the remaining cookies into the sides.
