Receta Corn Casserole or Corn Spoon Bread
This corn casserole can also be called a spoon bread because it contains an egg. However, only one egg. It is not the truly souffle-like spoon bread I had at a quaint inn in Virginia many years ago. It is laden with cheddar cheese…. absent from my inn spoon bread experience. However, it is very easy to make and very yummy.
Recipe: A Corn Bread
Ingredients:
- 1 (6 – 8 oz.) package corn muffin mix
- 1 – 1 1/2 c. whole kernel corn (or 1 can whole kernel corn)
- 1 can cream-style corn
- 1 egg, slightly beaten
- 1 c. sour cream
- 1 stick butter, melted
- 8 oz. +/- cheddar cheese (reserve 1/2 c. or so to put on top, if desired)
Instructions:
Preheat oven to 350 degrees F.
Combine all ingredients in a mixing bowl.
Spread into a buttered or sprayed 9 X 13 baking dish or similar dish.
Top with reserved cheese, if desired, 20 to 30 minutes after starting to bake.
Bake for 45 – 55 minutes until golden brown (and cheese on top has melted, if using).
