Ingredientes

  • 2 pkt frzn corn kernels - (10 ounce ea) thawed
  • 1/4 c. sugar
  • 1 1/4 tsp salt
  • 2 c. lowfat milk
  • 4 lrg Large eggs
  • 1/2 x vanilla bean split lengthwise, and seeds scraped, reserving pod for another use (or possibly 1/2 tspn vanilla extract)
  • 1/4 c. unsalted butter - (1/2 stick) melted, cooled, plus more butter to coat casserole
  • 3 Tbsp. all-purpose flour
  • 1/4 c. minced fresh chives plus
  • 3 Tbsp. minced fresh chives as a garnish
  • 1 pch freshly-grated nutmeg

Direcciones

  1. Preheat oven to 350 degrees, and butter a 1 1/2-qt casserole dish, pie plate, or possibly quiche dish.
  2. In a food processor, pulse half of corn till coarsely minced. In a bowl, stir together minced corn and remaining corn kernels and sprinkle with sugar and salt, stirring till combined well.
  3. In another bowl whisk together lowfat milk, Large eggs, vanilla seeds, butter, flour, and chives and stir into corn till combined well. Pour pudding into the buttered dish and sprinkle with nutmeg. Bake pudding in middle of oven till center is just set, about 45 min. Garnish pudding with chives.
  4. This recipe yields 8 servings.
