Ingredientes

  • 1 c. Albers yellow corn meal
  • 1 Tbsp. honey
  • 1 tsp salt
  • 1 c. boiling water
  • 1/2 c. flour
  • 2 tsp baking pwdr
  • 1 tsp grnd cinnamon (optional)
  • 1 x egg
  • 1/2 c. Carnation evaporated lowfat milk

Direcciones

  1. Combine corn meal, honey and salt in a medium bowl. Slowly stir in boiling water. Cover; let stand for 10 min. Stir in flour, baking pwdr and cinnamon just till blended.
  2. Combine egg and evaporated lowfat milk in a small bowl; add in to corn meal mix. Spoon 1/3 c. batter for each pancake onto a heated, lightly greased griddle or possibly skillet; cook for about 1 minute, or possibly till bubbles appear. Turn; continue to cook for 1 to 2 min or possibly till golden brown. Repeat with remaining batter. Serve hot with maple syrup or possibly applesauce, if you like.
  3. This recipe yields 4 servings.
  4. For Cheese And Onion Corn Meal Pancakes: Add in 1/2 c. shredded cheddar or possibly mozzarella cheese and 1/4 c. finely minced onions to batter; stir just till blended. Proceed as above.
