I%3C/p%3E%3Cp%3Ekept%20plugging%20away%20at%20the%20massive%20pile%20of%20corn%20and%20finally%20at%20about%209%3C/p%3E%3Cp%3Edozen%20or%20so%20I%20said%20...I%20quit.%20I%20called%20family%20and%20asked%20if%20they%20wanted%3C/p%3E%3Cp%3Ethe%20rest.%20I%20knew%20I%20still%20had%20to%20process%20all%20this%20and%20I%20just%20couldn't%3C/p%3E%3Cp%3Edeal%20with%20any%20more%20corn.%20I%20still%20have%20other%20things%20out%20in%20the%20garage%20to%3C/p%3E%3Cp%3Edeal%20with%20after%20this.%3C/p%3E%3Cp%3EAnd%20so%20last%20nite%20after%20all%20the%20blanching%20was%20done,%20I%20cut%20up%20enough%20corn%20into%20coblets%20to%20fill%203%20gallon%20freezer%20bags.%20There's%20only%20two%20of%20us%20here%20so%20I'm%20sure%20it%20will%20be%20enough%20for%20the%20yr.%20Sadly%20I%20now%20have%20to%20clean%20out%20a%20shelf%20in%20the%20freezer%20cuz%20there's%20no%20room.%20I%20didn't%20expect%20this%20corn%20till%20next%20month.%20So%20now%20Ill%20be%20going%20crazy%20trying%20to%20find%20room%20for%20all%20this.%3C/p%3E%3Cp%3EI%20cut%20off%20all%20the%20kernels%20from%20one%20pan%20of%20the%20corn.%20As%20you%20can%20see%20in%20my%20pictures%20theres%20two%20piled%20high%20with%20several%20dozen%20ears%20still.%20And%20there%20was%20one%20half%20tray%20not%20filled%20yet.%20The%20half%20tray%20I%20cut%20up%20into%20coblets.%3C/p%3E%3Cp%3EThe%20blanching%20water%20smelled%20good%20tho%20and%20since%20I%20had%3C/p%3E%3Cp%3Edecided%20to%20make%20corn%20cob%20stock%20later%20with%20the%20leftover%20cobs,%20I%20tossed%3C/p%3E%3Cp%3Ethem%20back%20in%20that%20water%20as%20I%20cut.%20I%20also%20scraped%20off%20any%20milk%20on%20each%3C/p%3E%3Cp%3Ecob%20before%20throwing%20it%20in%20that%20water.%20After%20one%20pan%20tho%20it%20was%20late%20and%3C/p%3E%3Cp%3EI%20wasn't%20feeling%20well%20so%20I%20just%20turned%20the%20water%20on%20under%20the%20cobs%20to%3C/p%3E%3Cp%3Ecook%20awhile%20and%20had%20something%20to%20eat.%20I%20ended%20up%20going%20to%20bed%20very%3C/p%3E%3Cp%3Eearly%20cuz%20I%20was%20sick.%3C/p%3E%3Cp%3E(Corn%20cob%20stock)%3C/p%3E%3Cp%3ENext%20morning%20I%20started%20in%20heating%20the%20Pressure%20canner%3C/p%3E%3Cp%3Eit%20might%20help%20with%20that%20and%20surely%20couldn't%20hurt%20it.%20Its%20just%20an%20acid%3C/p%3E%3Cp%3Ewhich%20help%20keeps%20things%20from%20going%20bad%20anyway.%20One%20of%20my%20friends%20has%20a%3C/p%3E%3Cp%3Eyummy%20freezer%20corn%20recipe%20that%20I'm%20going%20to%20use%20for%20the%20rest%20of%20that%20stack...but%20I%20decided%20to%20try%20to%20make%20the%20jarred%20corn%20just%20as%20good.%3C/p%3E%3Cp%3ESo%20for%20each%20pt.%20jar%20I%20added%20a%20pat%20of%20butter,%20I%20topped%20it%3C/p%3E%3Cp%3Ewith%20the%20corn%20kernels.%20You%20pack%20it%20loosely%20in%20the%20jar,%20not%20really%20hard.%3C/p%3E%3Cp%3EOnce%20I%20was%20ready%20to%20can%20it%20I%20poured%20a%20ladle%20or%20so%20of%20the%20corn%20stock%20thru%3C/p%3E%3Cp%3Ea%20strainer%20into%20my%20jar.%20Run%20a%20knife%20around%20the%20edges%20and%20in%20the%20middle%3C/p%3E%3Cp%3Ea%20bit%20to%20mix%20it%20up%20and%20remove%20bubbles.%20If%20it%20needs%20more%20stock,%20then%3C/p%3E%3Cp%3Etop%20it%20up%20to%20a%20half%20inch%20from%20the%20top.%20Then%20I%20wipe%20the%20rims%20of%20the%20jar%3C/p%3E%3Cp%3Ereal%20good%20and%20put%20the%20lids%20on.%20From%20this%20pan%20of%20corn%20I%20was%20able%20to%20get%3C/p%3E%3Cp%3E24%20pts.%20of%20corn.%20So%20Ill%20be%20pressure%20canning%20them%20in%20two%20batches.%3C/p%3E%3Cp%3EThe%20rest%20I%20put%20in%20plastic%20freezer%20bags%20using%20my%20friends%3C/p%3E%3Cp%3Erecipe.%20Sadly%20I%20blanched%20all%20the%20corn%20before%20I%20read%20her%20recipe.%20She%20cut%3C/p%3E%3Cp%3Eoff%20raw%20corn%20and%20then%20did%20the%20recipe.%20It%20should%20still%20be%20good%20cuz%20the%20main%20part,%20scraping%20the%20corn,%20I%20still%20did.%20That's%20where%20all%20the%20good%20flavor%20is.%3C/p%3E%3Cp%3EToday%20I%20cooked%20the%20second%20batch%20of%20corn%20cobs%20and%20made%20stock%20from%20that.%20I%20strained%20it%20and%20ended%20up%20with%205qts.%20I'm%3C/p%3E%3Cp%3Egoing%20to%20try%20it%20in%20my%20clam%20chowder.%20And%20I%20read%20that%20you%20can%20make%20corn%3C/p%3E%3Cp%3Ecob%20jelly%20from%20it%20too.%20I%20don't%20have%20time%20to%20do%20that%20right%20now%20so%20at%3C/p%3E%3Cp%3Eleast%20its%20canned%20till%20I%20am%20able%20to%20do%20that.%3C/p%3E%3Cp%3EI%20just%20know%20I'm%20tired%20and%20I%20still%20have%20two%20boxes%20of%20peaches%20and%20two%20boxes%20of%20tomatoes%20to%20do.%20lol.%20I%20only%20wish%20I%20wasn't%20sick.%3C/p%3E%3Cp%3E*%20Pts.%20of%20corn%20were%20pressure%20canned%20at%2011lbs%20for%2055minutes.%3C/p%3E%3Cp%3ECorn%20cob%20stock%20was%20pressure%20canned%20at%2011lbs.%20for%2020min.%3C/p%3E%3Cp%3EUpdate:%20This%20yr.%20I%20think%20Im%20going%20to%20use%20some%20of%20that%20corn%20cob%20stock%20when%20I%20can%20the%20corn.%20I%20used%20all%20the%20milk%20and%20juices%20from%20it.%20But%20now%20that%20Im%20opening%20them%20to%20use%20the%20top%20color%20looks%20a%20bit%20off%20cuz%20I%20think%20there%20wasn't%20enough%20liquid.%20I%20just%20scraped%20that%20off%20and%20used%20the%20rest,%20Its%20fine.%20But%20this%20yr.%20I%20dont%20want%20to%20have%20to%20do%20that%20so%20Ill%20use%20corn%20cob%20stock%20to%20top%20the%20jars%20before%20canning.%3C/p%3E){kind=link}
