Receta Corn Salad

This Christmas season instead of over doing it like the masses at this time I decided to take another path and still in good spirits celebrate but in a simple way. In fact taking this step off the beaten path has had me taking a good look from the outside so to speak in the midst of all the festivities and normal trini bacchanal.

It’s as if a little overdo switch goes on in your brain and from October and there is a societal buying frenzy. All of a sudden you just feel like spending more, eating more; in fact you feel like doing more of everything… You’re accustomed shopping with one trolley through the year, then when November hits you see people with two, packed trolleys strolling toward the cashier…. You’re accustomed with your little 21″ flat screen tv, stove and fridge, December hits and somehow you find yourself browsing in one of the many appliance stores looking at the latest brands and of course suddenly your tv is too small to watch the game. Or, like nowadays it eh smart enough lol

Oh and who could forget us Trinis adopting the latest shopping trends of the business world, because you know we just loooove to follow the world…. The only Black Friday I knew of was Friday the 13th and it was a day of supposed bad luck. Now, Black Friday means you get up early to stand in front of some large establishment ready with trolley in hand, if you could get one, to shop in a frenzy for things you don’t really need just because you see the word SALE big and bold. And, there’s even a Cyber Monday to catch the web saavy individuals who shop online….Who knows, maybe in the future there would be names for the other days of the week just to make sure “they” get all of your hard earned money.

So, my dear readers, try to simplify your life this season and be mindful that life goes on long after the Christmas season. Save a little for a rainy day and keep an eye out for the oil prices these days….

So as the saying goes “eat little and live long” I have for you all a simple corn salad that, to me, is versatile. It can be a main dish or side dish, can be placed in a wrap or even be an accompaniment to an appetizer like tostones Mmm simply delicious.

And, coming to think of it instead of using the mayonnaise you could use a vinnaigrette with some heat …Sounds like ah plan. Here’s Corn Salad; simplicity with versatility.

CORN SALAD

In a deep bowl, mix together the corn, sweet pepper, olives, red onion, chive, garlic and pimento pepper.

In a separate bowl, mix together the mayonnaise, lemon juice, salt and pepper.

Pour mayonnaise mixture over the corn and mix well. Serve chilled.

Note: May be served on a bed of lettuce or with watercress.

Well I won’t keep you long. I believe I spoke too much at the beginning. Mind you I still could say a lot but I’ll leave some for the next post. Hope you enjoyed this simple but delicious corn salad.
