.%20How%20fitting%20is%20that.....she%20introduced%20me%20to%20taquitos%20when%20I%20was%20a%20child%20and%20she%20provided%20me%20with%20the%20tool%20to%20make%20my%20own%20taquito%20from%20scratch%20as%20an%20adult!%3C/p%3E%3Cp%3EThanks%20MOM!!!%20You're%20the%20bestest!%3C/p%3E%3Cp%3EI%20could%20go%20on%20and%20on%20about%20my%20mommy%20being%20my%20inspiration%20in%20life%20in%20so%20many%20ways....but%20this%20is%20going%20to%20be%20a%20long%20post%20as%20it%20is.%20So%20I'll%20save%20the%20mommy%20praising%20for%20another%20post.%20Mom%20will%20understand.%20Moms%20always%20do%20ya%20know%20:)%3C/p%3E%3Cp%3ENow%20that%20we%20have%20the%20mushy%20stuff%20out%20of%20the%20way....lets%20get%20down%20to%20business.%20I%20did%20a%20little%20tiny%20bit%20of%20research%20before%20starting%20my%20tortillas.%20I%20received%20a%20lot%20of%20very%20helpful%20information%20from%20Simply%20Recipes.%20They%20have%20a%20fantastic%20tutorial.%3C/p%3E%3Cp%3EAfter%20a%20trip%20to%20the%20Mexican%20Market%20for%20the%20Masa%20Instanteanea%20de%20Maiz%20(Instant%20Corn%20Masa%20Flour),%20I%20was%20ready%20to%20go!%3C/p%3E%3Cp%3ECheck%20it%20out....those%20are%20all%20the%20ingredients%20needed%20to%20make%20homemade%20corn%20tortillas.%3C/p%3E%3Cp%3EAnd%20the%20corn%20flour?%20As%20soon%20as%20I%20measured%20it%20out...I%20could%20smell%20it.%20It%20smelled%20like%20tortillas,%20like%20corn,%20mexican%20restaurants....and%20comforting.%3C/p%3E%3Cp%3ECorn%20Tortillas%3C/p%3E%3Cp%3E2%20cups%20Corn%20Flour%3C/p%3E%3Cp%3E1/4%20teaspoon%20salt%3C/p%3E%3Cp%3E1%201/4%20cups%20water%3C/p%3E%3Cp%3EMix%20all%20ingredients%20thoroughly%20for%20about%202%20minutes%20to%20form%20a%20soft%20dough.%20If%20the%20dough%20is%20too%20dry,%20add%20a%20little%20water.%20If%20it's%20too%20wet,%20add%20a%20little%20corn%20flour.%3C/p%3E%3Cp%3EIt's%20not%20a%20sticky%20dough%20so%20I%20didn't%20even%20need%20any%20flour%20for%20the%20surface.%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%2016%20equal%20balls%3C/p%3E%3Cp%3EEither%20cover%20them%20with%20a%20damp%20cloth%20or%20place%20in%20a%20plastic%20bag%20to%20keep%20them%20from%20drying%20out.%3C/p%3E%3Cp%3ELine%20the%20tortilla%20press%20with%20a%20piece%20of%20plastic.%20Place%20a%20ball%20on%20the%20press%20and%20cover%20with%20another%20piece%20of%20plastic.%3C/p%3E%3Cp%3EThis%20will%20prevent%20the%20tortilla%20from%20sticking%20to%20the%20press.%3C/p%3E%3Cp%3EClose%20the%20lid%20and%20press%20together%20with%20the%20%22arm%22,%20applying%20slight%20pressure%3C/p%3E%3Cp%3EOpen%20and%20see%20what%20you%20did....%3C/p%3E%3Cp%3EOk....this%20was%20my%20first%20attempt.%20See%20how%20it's%20pushed%20to%20the%20front%20and%20messed%20up%20at%20the%20edge%20of%20the%20press?%20It%20was%20at%20this%20point%20that%20I%20remembered%20watching%20Alton%20Brown%20make%20tortillas%20and%20he%20mentioned%20how%20the%20dough%20ball%20should%20be%20slightly%20off%20center%20to%20prevent%20this%20sort%20of%20thing%20from%20happening.%20Great%20episode.%20Love%20the%20guy!%3C/p%3E%3Cp%3ESoo...the%20next%20dough%20ball%20was%20placed%20slightly%20off%20center,%20positioned%20more%20toward%20the%20press%20hinge%3C/p%3E%3Cp%3EI%20was%20so%20thrilled%20with%20the%20result%20that%20I%20forgot%20to%20take%20a%20picture%20and%20proceed%20to%20cook%20it.%20(I%20also%20cooked%20the%20slightly%20messed%20up%20first%20one.%20I%20mean...why%20waste%20it,%20right?%3C/p%3E%3Cp%3ESoo...as%20you%20press%20the%20dough,%20lift%20off%20the%20top%20layer%20of%20plastic%20wrap,%20place%20tortilla%20in%20your%20hand%20with%20the%20second%20piece%20of%20plastic%20facing%20up...the%20tortilla%20halfway%20supported%20by%20your%20hand%20and%20the%20rest%20of%20the%20tortilla%20draped%20over%20the%20side%20of%20your%20hand.%20%20(Yes,%20thats%20from%20the%20first%20dough%20ball%20that%20I%20did%20and%20messed%20up.)%3C/p%3E%3Cp%3EGently%20lie%20the%20tortilla%20on%20an%20ungreased%20skillet%20that's%20been%20preheated%20on%20medium-high.%3C/p%3E%3Cp%3ECook%20tortilla%20for%20about%2050%20-%2060%20seconds%20on%20each%20side.%20Remove%20from%20skillet%20and%20keep%20warm%20in%20a%20cloth%20napkin%20or%20tortilla%20warmer%20while%20you%20continue%20to%20bake%20the%20rest%20of%20them%3C/p%3E%3Cp%3EAnd%20then%20stand%20back%20and%20admire%20the%20fruits%20of%20your%20labor.%20That%20probably%20took%20about%2045%20minutes.%20And%20that%20was%20because%20your%20griddle%20/%20skillet%20could%20only%20cook%20one%20tortilla%20at%20a%20time.%3C/p%3E%3Cp%3ENow,%20because%20they%20are%20warm,%20you%20will%20not%20need%20to%20preheat%20the%20tortillas%20to%20make%20them%20flexible%20enough%20for%20taquito%20rolling.%3C/p%3E%3Cp%3EThe%20meat%20I%20made%20for%20the%20taquitos%20is%20not%20authentic.%20It's%20a%20combo%20of%20a%20few%20recipes%20that%20I%20saw%20and%20liked%20(and%20some%20parts%20I%20discarded).%20I've%20heard%20of%20people%20even%20using%20canned%20beef%20hash%20as%20the%20taquito%20filling.%20Don't%20stress%20over%20it.%20If%20it%20tastes%20good....it's%20all%20good.%3C/p%3E%3Cp%3ESimple%20Taquito%20Meat%3C/p%3E%3Cp%3ECombine%20and%20heat%20through.%20Try%20not%20to%20have%20a%20very%20wet%20mixture.%20You%20don't%20want%20to%20sog%20out%20the%20tortilla.%3C/p%3E%3Cp%3ETake%20a%20spoonful%20of%20meat%20and%20place%20down%20the%20center%20of%20a%20corn%20tortilla,%20slightly%20off%20center.%3C/p%3E%3Cp%3ERoll%20up%20and%20hold%20together%20with%20a%20toothpick%3C/p%3E%3Cp%3EFry%20in%20batches,%20turning%20once%20as%20they%20brown%3C/p%3E%3Cp%3EPlace%20on%20a%20plate%20lined%20with%20paper%20towel%20to%20drain%20off%20excess%20fat.%20Remove%20the%20toothpick%20and%20serve%20with%20salsa%20and%20/%20or%20guacamole%20(mole,%20mole,%20mole)%20Sorry...I%20can't%20say%20guacamole%20without%20thinking%20of%20Austin%20Powers.%3C/p%3E%3Cp%3EThis%20may%20take%20a%20little%20time...but%20let%20me%20tell%20you....not%20only%20are%20they%20easy,%20but%20they%20taste%20fantastic!!%3C/p%3E%3Cp%3EAnd%20they're%20real.%20That's%20why%20I'm%20going%20to%20enter%20this%20into%20this%20weeks%20Two%20for%20Tuesday%20-%20Real%20Food.%3C/p%3E%3Cp%3EHead%20on%20over%20to%20Heather's%20at%20GirliChef's%20to%20see%20the%20other%20Two%20for%20Tuesday%20entries%20for%20this%20week.%3C/p%3E){kind=link}
