Cornbread Waffles with Pulled Pork is a fun meal that's as easy to make as it is to eat! Crispy homemade cornbread waffles are topped with prepared pulled pork, cheddar cheese and green onions for something a little different for your dinner menu!
It's corn season and I could not be any happier! There really is nothing better than fresh corn on the cob, well, except for maybe these cornbread waffles topped with pulled pork! Sunday Supper is celebrating summer corn with a very tasty event featuring all sorts of corn recipes this week!
Cornbread waffles are so fun for a weeknight meal. They taste just like cornbread, except in waffle form, and they make a great base for pulled pork!
You could make your own pulled pork for this recipe, but I took the easy way out and used the store-bought kind. My family enjoys the sauce-less pulled pork from Costco, and that is what I used in this recipe. I had a jar of homemade cherry BBQ sauce in the fridge that I added to the pulled pork. You can use your favorite BBQ sauce or you can just buy the pulled pork already sauced. So many options!
Pile on the pulled pork as high as you like. I took a more conservative approach to my waffle creation and used about a cup of pulled pork. Then, I topped it with some shredded cheddar cheese and a sprinkling of green onion! YUM!
The cheese gets all gooey from the heat of the pork and the onions add a nice crunch to the whole deal. What do you think? Would you eat this for dinner? My family is already requesting I make this one again soon!
Cornbread Waffles with Pulled Pork

Crispy cornbread waffles topped with saucy pulled pork, cheddar cheese and green onions. Ingredients
For Cornbread Waffles:
1 3/4 cup low-fat buttermilk
2 large eggs, separated 5 TBS canola or corn oil
1 1/2 cups all-purpose flour
1 cup yellow cornmeal
3 TBS honey
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. kosher salt 1 cup fresh or frozen corn kernels
8 cups pulled pork with BBQ sauce (I used store-bought)
2 cups shredded cheddar cheese 3 - 4 sliced green onions
Instructions
Preheat waffle iron according to manufactures directions. In large measuring cup, combine the buttermilk, egg yolks, corn oil and honey. Set aside. In large bowl, combine the flour, cornmeal, baking powder, baking soda and salt. Pour the buttermilk mixture into the flour mixture and stir to combine. Let mixture sit for about 10 minutes to soften the cornmeal. Meanwhile, in medium bowl, with electric mixer, whip the egg whites to form stiff peaks. Fold the egg whites into the cornmeal batter. Fold in the corn kernels. Spray waffle iron lightly with cooking spray, and pour out about 1/3 cup of batter for each waffle and cook in iron to desired doneness. Repeat with batter until all used up. Keep waffles warm in low oven. Heat the pulled pork until warm, according to package directions. To assemble meal, take one waffle and top with approximately 1 cup pulled pork mixture, 1/4 cup cheese and a sprinkling of green onions. Use two waffles for heartier appetites.
