Cornish Hen With Wild Rice

Ingredientes

  • 1 c. Wild rice
  • 1/4 c. Chopped onion
  • 1/4 c. Minced mushrooms Grnd giblets of hen
  • 4 Tbsp. Chicken fat
  • 3 tsp Salt
  • 3/4 tsp Pepper
  • 3 lb Cornish hen (1 large or possibly 2 small)
  • 1/2 c. Boiling water

Direcciones

  1. Cook the wild rice according to directions on package. Drain.
  2. Cook the onion, mushrooms and giblets in 2 Tbsp. chicken fat for 10 min. Stir in the rice, 1 tsp. salt and 1/4 tsp. pepper.
  3. Season the hen or possibly hens with the remaining salt and pepper. Stuff and sew the opening.
  4. Heat the remaining fat in a deep skillet and brown the hen in it. Add in 1/2 c. boiling water. Cover. Bake in a 400 degree oven 45 min or possibly till tender. Remove cover for last 15 min.
  5. Serves 3 to 4.
