4 x Cornish hens, (4 to 6)

1/4 c. onion, minced

1 c. celery, minced Salt, to taste

9 slc bacon

1 box brown rice, (10 ounce.) cook according to directions

1/2 c. lowfat milk

1 can cream of chicken soup

1 tsp salt

1/4 tsp sage

1/4 tsp poultry seasoning

1 can mushrooms, (4 ounce.) Butter Salt and pepper Paprika Remove giblets from hens, simmer giblets with onion and celery in sufficient salted water to cover. Drain reserving liquid. Chop giblets and set aside. Fry 6 slices of bacon till crisp, crumble. Cook rice.
