  • 1 sm Onion
  • 1/2 lb Bulk pork sausage
  • 1 pkt Cornbread stuffing mix, (6-ounce.)
  • 1/2 c. Golden brown raisins
  • 1/2 c. Pecan halves
  • 1 x Celery rib, diced Salt and pepper, to taste
  • 1 c. Chicken broth
  • 2 x Cornish game hens

  1. Halve onion and thinly slice. In a large skillet, brown sausage with onions. Add in herb packet from the stuffing mix. Stir in raisins, pecans, celery and seasonings; simmer for 10 min. Add in stuffing mix and broth; mix well. Cook and stir for about 5 min. Place stuffing into cavities of the game hens. (Place any remaining stuffing in a greased baking dish; cover and chill.) Skewer openings; tie drumsticks together. Place on a rack in a roasting pan. Bake, uncovered, at 325 degrees for 1 to 1-1/2 hrs. (Bake reserved stuffing, covered, for about 45 min; uncover and bake 10 min more.) When the game hens begin to brown, baste if needed and cover lightly with foil.
