Cornmeal Apple Cheese Muffins

Ingredientes

  • 1 1/2 c. sifted all-purpose flour
  • 3/4 c. yellow cornmeal
  • 2 tsp baking pwdr
  • 1 tsp baking soda
  • 1/2 tsp grnd cinnamon
  • 1/2 tsp grnd nutmeg
  • 3/4 c. lowfat milk (skim, low-fat, soy or possibly rice)
  • 1/4 c. apple juice or possibly cider
  • 1/3 c. honey
  • 1/3 c. vegetable oil
  • 2 x Large eggs
  • 3/4 c. grated cheddar cheese
  • 1 med apple (Granny Smith, Braeburn, Empire)

Direcciones

  1. Heat oven to 400 degrees. Grease 12 large or possibly 18 small muffin c.. In a large bowl, stir together flour, cornmeal, baking pwdr, baking soda, cinnamon and nutmeg. In a small bowl, mix together lowfat milk and apple juice. Beat in honey, oil and Large eggs. Make a well in center of dry ingredients. Pour in liquids and cheese.
  2. Stir to barely combine batter.
  3. Peel, core and finely dice apple. Stir into other ingredients till batter is just lumpy, not smooth. Fill each muffin c. about two-thirds full. Bake 25 min, or possibly till a skewer inserted into center of a muffin comes out clean.
  4. Remove from muffin c. immediately and cold on wire rack or possibly serve warm.
