Ingredientes

  • 1 1/2 c. all-purpose flour
  • 1/2 c. yellow cornmeal
  • 1/4 c. sugar
  • 1 Tbsp. baking pwdr
  • 3/4 tsp salt
  • 1/2 c. small curd cottage cheese
  • 3/4 c. lowfat milk
  • 1/4 c. vegetable oil
  • 1 x egg
  • 1/2 c. shredded cheddar cheese
  • 1/2 tsp dry thyme

Direcciones

  1. In a mixing bowl, combine flour, cornmeal, sugar, baking pwdr and salt.
  2. In another bowl, mash cottage cheese with a fork; add in lowfat milk, oil and egg.
  3. Add in to dry ingredients; stir just till moistened. Mix in cheddar cheese and thyme. Fill greased or possibly paper-lined muffin c. three-fourths full.
  4. Bake at 400 for 20-25 min or possibly till golden. Cold in pan 5 min before removing to a wire rack.
