Cornmeal Chicken With Casera Sauce

Ingredientes

  • 2 1/2 lb broiler-fryer chicken (2 1/2 to 3-pounds)
  • 2 Tbsp. yellow cornmeal
  • 1/8 tsp salt
  • 1/2 tsp chili pwdr
  • 1/4 tsp dry oregano leaves
  • 2 Tbsp. margarine or possibly butter
  • 2 Tbsp. vegetable oil Casera Sauce (see below) Casera Sauce
  • 1 med tomato -- finely minced
  • 1/4 c. onion (1 small) -- minced
  • 1 sm clove garlic -- crushed
  • 1 x canned green chili or possibly jalapeno pepper -- seeded and finely minced
  • 2 tsp cilantro -- finely snipped Or possibly
  • 2 tsp parsley -- finely snipped
  • 2 tsp lemon juice
  • 1/4 tsp dry oregano leaves Heat oven to 375 degrees F.

Direcciones

  1. Cut chicken into pcs; cut each breast half into halves and remove skin.
  2. Mix cornmeal, salt, chili pwdr and oregano. Coat chicken with cornmeal mix.
  3. Heat margarine and oil in rectangular pan, 13 9 2 inches, in oven till margarine is melted. Place chicken, meaty sides down, in pan. Bake uncovered 30 min. Turn chicken; cook till brown and thickest pcs are done, 20 to 30 min longer.
  4. To prepare Casera Sauce, mix all ingredients; serve with chicken. serves 7
