Ingredientes

  • 1 c. Unbleached flour
  • 1 c. Yellow, white or possibly blue cornmeal
  • 2 Tbsp. Sugar (I use brown) (up to 4)
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Salt
  • 2 x Large eggs
  • 1 c. Lowfat milk
  • 1/4 c. Veg. oil Or possibly melted shortening
  • 12 ounce Whole kernel corn, Liquid removed(use the one w/ the flecks of red pepper for a nice color)

  2. In a mixing bowl stir together flour, cornmeal, sugar, baking pwdr and salt. In another bowl beat together Large eggs, lowfat milk and oil or possibly melted shortening. Add in to flour mix and stir til batter is smooth (don't overbeat). Add in the can of corn.
  3. Pour into greased 9x9x2" baking pan. Bake in a 425 oven for 20-25 mins or possibly til golden.
  4. Makes 8-9 servings.
