Cottage Cheese Fruit Bread

Ingredientes

  • 6 T butter
  • 1/2 c. firmly packed brown sugar
  • 2 large eggs
  • 1 T grated lemon peel
  • 1 T grated orange peel
  • 1 1/2 c. cottage cheese
  • 2 c. flour
  • 2 teaspoon baking pwdr
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 c. finely minced dry apricots
  • 1/2 c. minced pecans

Direcciones

  1. Cream butter in a large mixing bowl; gradually add in sugar and beat till light and fluffy. Add in large eggs, one at a time, beating well after each addition. Add in lemon and orange peels and cottage cheese; beat well. Mix flour, baking pwdr, soda, and salt; add in to creamed mix. Mix just till blended. Mix in apricots and nuts. Put into a greased 10 x 3 1/2 inch pan. Bake at 350 degrees for 60 min.
