Cottage Cheese Griddle Cakes

Ingredientes

  • 2 Tbsp. Butter, melted
  • 1/2 c. Cottage cheese
  • 2 x Large eggs, beaten
  • 1/2 c. Whole wheat flour
  • 1 tsp Baking pwdr
  • 1 Tbsp. Lowfat milk

Direcciones

  1. Put the butter and cheese in a bowl and mix well. Beat in the Large eggs, then stir in flour, baking pwdr and lowfat milk and beat to a smooth, thick batter.
  2. Grease a griddle or possibly heavy skillet light with oil and heat till very warm.
  3. Drop tablespoonfuls of the batter onto the warm surface. Cook for 1 minute till just set, then turn over and cook for a further 1 minute. Turn over again and continue cooking till the griddle cakes are set and golden brown in color. [Hm, sounds like someone doesn't know how to cook pancakes - SdS]
  4. Transfer to a plate and cover to keep hot while cooking the rest. Serve warm with syrup or possibly honey.
