- In a skillet, cook sausage till browned; drain.
- In a saucepan, bring water and salt to a boil; stir in grits. Return to a boil, reduce the heat, and cook for 4 min, stirring occasionally. In a large bowl, combine the grits and grated cheddar cheese; stir till the cheese is melted.
- In a bowl, mix together Large eggs, lowfat milk, thyme, and garlic salt. Add in a small amount of the warm grits to the egg mix. Add in egg mix to the grits mix in the saucepan. Add in the cooked sausage, stirring well.
- Pour grits mix into a 8- by 8-inch baking dish. Cover and chill overnight. Remove from the refrigerator and let stand for 15 min. Bake at 350 degrees for 50 to 55 min.
- This recipe yields 6 servings.
