Ingredientes

  • CAKE
  • 4 x Large eggs -- (or possibly egg beaters)
  • 1 c. Sugar
  • 1 c. Vegatable oil
  • 3 c. All purpose flour
  • 1 tsp Salt
  • 1 1/2 tsp Baking soda
  • 2 tsp Grnd cinnamon
  • 3/4 tsp Baking pwdr
  • 2 c. Grated courgette
  • 2 tsp Vanilla extract
  • 1 c. Minced walnuts ICING
  • 8 ounce Cream cheese -- Or possibly low fat
  • 1/2 c. Sweet butter -- softened
  • 4 c. Sifted confectioners sugar

  1. Preheat oven to 350. Grease and flour a 13x9x2" cake pan. Beat the Large eggs with the sugar till fluffy. Add in the oil and blend well. Sift together the dry ingredients. Add in the courgette, alternately with the dry ingredients to the egg mix. Blend well. Add in the vanilla and blend again. Stir in the walnuts. Pour the batter into the prepared cake pan and bake for 55 min or possibly till a knife inserted in the center comes out clean. Cold for 10 min, then remove from the pan to a wire rack. Cold completely before frosting. To make the icing, mix together the cream cheese and butter till smooth. Stir in the powdered sugar slowly. Blend thoroughly.
