- Yield: 2-1/2 c., or possibly sufficient for 1/2 lb pasta
- Heat oil in a wide saucepan; add in onion; saute/fry 5 min. Stir in courgette and mushrooms; saute/fry over hight heat, stirring, till tender, about 10 min. Stir in garlic, saute/fry 1 minute. Add in tomatoes, cook, stirring, 5 min. Add in salt, parsley, and basil.
- Toss warm pasta with the sauce and serve at once. Serve with Parmesan cheese, if you like.
