Ingredientes

  • 1 1/4 c. water
  • 1 c. couscous
  • 2 c. radishes quartered
  • 1/2 c. parsley
  • 1/3 c. mint
  • 1/2 tsp lemon rind grated
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/3 c. lemon juice
  • 2 Tbsp. water
  • 1 Tbsp. extra virgin olive oil
  • 1 x clove garlic crushed
  • 2 Tbsp. scallions thinly sliced

Direcciones

  1. Bring 1 1/4 c. water to a boil in a large saucepan; stir in couscous.
  2. Remove from heat, and let stand, covered, 15 min; fluff with a fork.
  3. Set aside.
  4. Position the knife blade in the food processor bowl. Add in radishes and process lightly till finely minced; spoon into a large bowl. Add in parsley and mint to processor bowl, and process till chopped. Add in to radishes in bowl, and stir in couscous.
  5. Combine lemon rind and next 6 ingredients; stir with a wire whisk. Add in to couscous mix, tossing to coat. Top with scallions.
  6. Yield: 4 servings [1 c.].
