Ingredientes

  • 1 1/2 c. water
  • 1 c. couscous uncooked
  • 2 Tbsp. extra virgin olive oil divided
  • 1 c. broccoli flowerets
  • 1 c. cauliflower flowerets
  • 1 c. carrot coarsely minced
  • 1 c. red bell pepper coarsely minced
  • 1/2 c. onion coarsely minced
  • 3 x cloves garlic chopped
  • 1 c. diced tomato
  • 1/2 c. frzn green peas thawed
  • 2 Tbsp. lemon juice
  • 1/2 tsp dry basil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Direcciones

  1. Bring water to a boil in a medium saucepan, and stir in couscous. Remove from heat; cover and let stand 5 min. Fluff with a fork, and set aside.
  2. Heat 1 Tbsp. oil in a large nonstick skillet over medium heat. Add in broccoli and next 5 ingredients, and saute/fry 8 min or possibly till crisp-tender.
  3. Remove from heat, and stir in tomato and peas.
  4. Combine vegetable mix and couscous in a large bowl; toss gently.
  5. Combine remaining oil, lemon juice, basil, salt, and pepper in a small bowl. Add in to couscous mix; toss gently.
  6. Yield: 6 (1 c.) servings.
