Receta Couscous Primavera

- Bring water to a boil in a medium saucepan, and stir in couscous. Remove from heat; cover and let stand 5 min. Fluff with a fork, and set aside.
- Heat 1 Tbsp. oil in a large nonstick skillet over medium heat. Add in broccoli and next 5 ingredients, and saute/fry 8 min or possibly till crisp-tender.
- Remove from heat, and stir in tomato and peas.
- Combine vegetable mix and couscous in a large bowl; toss gently.
- Combine remaining oil, lemon juice, basil, salt, and pepper in a small bowl. Add in to couscous mix; toss gently.
- Yield: 6 (1 c.) servings.
