Ingredientes

  • 1 c. dry apricots quartered
  • 1 c. dry cur as needed
  • 1/2 lb snow peas trimmed
  • 2/3 c. extra virgin olive oil
  • 3 Tbsp. lemon juice
  • 2 x garlic cloves chopped
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp freshly-grnd black pepper
  • 6 c. cooked couscous
  • 2 c. salted roasted cashews - (10 to 12 ounce)
  • 4 x green onions thinly sliced

Direcciones

  1. Place apricots and currants in medium bowl and cover with warm water. Soak 20 min.
  2. Meanwhile, fill 2 1/2 qt saucepan two-thirds full with water and bring to boil. Cook snow peas till bright green and crisp-tender, about 2 min. Drain and rinse under cool water till cold. Pat dry with paper towels. Set aside.
  3. In small mixing bowl combine oil, lemon juice, garlic, red pepper flakes, salt, sugar and pepper. Whisk to combine. Taste and adjust seasonings. Set aside.
  4. In large mixing bowl combine couscous, cashews, green onions and snow peas. Drain apricots and currants. Pat dry with paper towels and add in to couscous mix. Toss lightly to combine. Add in dressing, toss to mix through, and serve.
  5. This recipe yields 6 to 8 servings.
