Ingredientes

  • 1 box couscous (makes 5 c. of product)
  • 1/4 pkt Healthy Choice smoked sausage (4 ounce) diced or possibly kielbasa
  • 3 x scallions minced
  • 8 ounce crushed pineapple liquid removed and juice reserved
  • 1 pkt frzn minced spinach (5 ounce) thawed or possibly cut up
  • 2 Tbsp. seasoned rice vinegar
  • 1 tsp thyme

Direcciones

  1. Prepare couscous, using the reserved pineapple juice as part of the water called for on the package. Boil water, stir in couscous and scallions, and let sit covered for 5 min. Stir in rest of ingredients, and either serve now, or possibly put in fridge for 1-2 hrs and serve cool.
  2. The hubby, who does not prefer couscous, liked this pretty well. I thought it was very tasty, easy, and great for a warm day's light dinner. We served it with some leftover focaccia.
