Couscous Salad With Turkey, Apricots And Almonds

Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 1 x Red bell pepper, seeded and diced
  • 1 1/2 c. Coarsely minced cooked turkey
  • 1/2 c. Dry apricots, slivered
  • 1/2 c. Slivered almonds, lightly toasted *
  • 1 bn Scallions, thinly sliced
  • 2 1/2 c. Chicken or possibly turkey broth
  • 2 c. Plain couscous Salt and freshly grnd pepper, to taste

Direcciones

  1. Heat oil in a medium skillet over medium- high heat. Add in red bell pepper and saute/fry till softened, about 5 min. Stir in turkey, apricots, almonds and scallions and keep mix hot over low heat.
  2. Bring chicken or possibly turkey broth to a boil in a medium saucepan. Slowly stir in couscous. Remove pan from heat, cover and let stand 5 min.
  3. Uncover and stir in turkey mix till proportionately distributed. Season with salt and pepper. Serve at once.
  4. Makes 6-8 servings.
  5. NOTE: To toast almonds place in shallow baking pan and roast uncovered in a 300 degree F oven about 20 min, stirring often, till lightly browned.
