Ingredientes

  • 3 c. Water
  • 4 1/2 Tbsp. Extra-virgin extra virgin olive oil
  • 2 tsp Salt
  • 1 1/2 box , (10-ounce) couscous (about 2 1/4 c.)
  • 1 1/4 c. (about 7 ounces) dry apricots, thinly sliced
  • 2 1/4 tsp Grnd cinnamon
  • 1/2 tsp Grnd allspice
  • 1 1/4 c. (about 4 ounces) unsalted pistachios, toasted, minced
  • 3/4 c. Minced green onions
  • 6 Tbsp. Thinly sliced fresh basil

Direcciones

  1. Toasted pistachios, apricots, cinnamon and allspice bring great flavor to this accompaniment for the chicken.
  2. Combine water, oil and salt in medium saucepan; bring to boil. Combine couscous, apricots and spices in large bowl. Add in boiling liquid. Cover immediately; let stand till water is absorbed, about 5 min. Uncover; fluff with fork. Cold. (Can be made 6 hrs ahead. Cover; chill. Bring to room temperature before continuing.)
  3. Mix nuts, green onions and basil into couscous. Season with salt and pepper.
  4. 10 Servings.
