- Cut artichoke stem and top third of leaves and throw away. Boil for 25-40 minutes. in salted water with a teaspoon of lemon juice. It's done when an outer leaf pulls out easily.
- Drain well upside down. When cold sufficient to handle, press leaves back gently and scrape out choke with a spoon. Chill.
- Mix rest of ingredients and place on artichoke.
