Ingredientes

  • 1/2 c. minced green peppers
  • 2 Tbsp. butter
  • 4 Tbsp. all-purpose flour
  • 1 c. half and half
  • 1 x Egg yolk, beaten
  • 1 lb crabmeat
  • 1 c. lowfat sour cream
  • 2 Tbsp. grated Romano cheese Salt and pepper to taste Hollandaise Sauce, optional, (see Sauce section) Basic Crepes, recipe in this section Saute/fry green peppers in butter.

Direcciones

  1. Add in flour and half and half, stirring constantly, cooking till thick.
  2. Add in a little of the warm mix to the egg yolk; then stir back into the mix in the saucepan.
  3. When quick thick, add in crabmeat, lowfat sour cream and cheese.
  4. Season to taste and heat to serving temperature.
  5. Spoon over crepes and roll up.
  6. Top rolled crepes with hollandaise sauce, if you like.
