I’ve been holding on to this recipe for a while–I have no idea why, because you really should have it in your repertoire. I remember eating Cracker Jack’s as a kid, but i think they make a fine adult snack as well. To amp up the wow factor you could add cashews or almonds as well…
Cracker Jacks
Ingredients:
- 8 cups popped popcorn (about 1 batch in a Whirly Pop)
- 1 cup peanuts (cashews or almonds)
- 3/4 cup brown sugar
- 1/4 cup margarine
- 3 tablespoons corn syrup
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla (or almond if you are using almonds)
Directions:
Spray a 9 x 13 baking dish with non-stick cooking spray. Place the popcorn in the dish.
Preheat oven to 300 degrees. In a 2 quart sauce pan, combine the brown sugar, margarine, corn syrup and slat over low heat. After the margarine melts, cook without stirring for about 3 minutes. Stir in the baking soda and vanilla (or almond). Quickly pour this over the pan of popcorn. Mix gently but thoroughly to
coat. Bake for 15 minutes. Let cool, then break up into small pieces. Store in an airtight container.
